Grown on old vines planted in 1965, this wine impresses with its fruity and fresh character. The aroma is a pleasant combination of white flowers and lightly toasted almonds. The character of the soil comes out in a great minerality, leading into a honeyed finish. Sélection Massale refers to a traditional vineyard management method whereby dead vines are replaced with clippings of the best and healthiest vines in the vineyard, retaining the character of terroir.
Once planted in all of Burgundy, Sacy is now almost extinct. Céline and Frédéric are the only growers that are still committed to this historic grape and the only ones who produce a 100% varietal Sacy. Pleasant scents of white flowers are complemented by undertones of green apples. Light and elegant with a refreshing, crisp acidity.
Well-balanced and slightly racy, very typical Chablis. It reveals notes of lemon, quince, and white flowers associated with discreet hints of white peach. Complemented by limestone/minerality (terroir) as well as an imperceptible hint of almond.
The nose is fruity, elegant and slightly unctuous. It reveals notes of ripe lemon, ripe clementine along with slight hints of yellow plum as well as a subtle hint of zests. The palate is fruity, fresh, well-balanced, well-built, racy and offers a beautiful acid frame, a beautiful suavity, elegance, and straight forward.
