This Chiroublesis an example of the new, organic/bio-dynamic philosophy that ArthurandPierre introduced when they took over the estate in 2011. The grapes are harvested by hand to ensure that only healthy clusters are used. Natural yeasts are used for a spontaneous fermentation, following a traditional carbonic maceration. No sulfites are added throughout the process. A natural expression of Gamay with full berry flavours, a fresh acidity, and soft tannins.
On the nose, aromas of gooseberry, honeydew melon, and herb de provence with notes of green apple and almond. The palate is light and refreshing, with citrus, gooseberry, and a crisp green apple finish.
Deep, the nose favours aromas of blackcurrant and spices. The palate reveals notes of menthol and pepper underlined by tannins both firm and silky. Subtle notes of violet soften the tannins, velvety and supple on the palate.
A combination of velvet, elegance and power. A beautiful Cabernet Franc – bold with ripe, silky tannins.
Grown on old vines planted in 1965, this wine impresses with its fruity and fresh character. The aroma is a pleasant combination of white flowers and lightly toasted almonds. The character of the soil comes out in a great minerality, leading into a honeyed finish. Sélection Massale refers to a traditional vineyard management method whereby dead vines are replaced with clippings of the best and healthiest vines in the vineyard, retaining the character of terroir.
Well-balanced and slightly racy, very typical Chablis. It reveals notes of lemon, quince, and white flowers associated with discreet hints of white peach. Complemented by limestone/minerality (terroir) as well as an imperceptible hint of almond.
Wanting to respect the French tradition of classifying their cognacs, the Pasquet family decided against using the export-oriented terms such as VS, VSOP, and XO. The 04 is their youngest cognac, equivalent to a VS, with 04 representing the minimum age of the youngest cognac that was used in the blend. The 04 displays a beautiful yellow colour in the glass. In the nose refreshing notes of pear, grapes, and citrus with underlying hints of oak providing complexity.
